My mom at work typed up this big email, then copied it with ctrl-c, then accidentally crtl-c'ed something else, loosing the text in the process. Is there any way it could be retrieved?

What did she type the email in? outlook, outlook express, lotus notes, star office?
Kind of important here ;)
And did she perform a CTRL+Z yet?

.
Not sure what she can do at this point since she copied over the original text in the e-mail message before saving it to a separate file. Perhaps someone else here knows a trick that will let you retrieve recent input from the Windows clipboard cache - regardless of the app she was using at the time.
Of course, for critical data recovery, there are companies that specialize in it. But they tend to be quite expensive and require access to your hard drive.
In the future though, I suggest that she use something like ClipBox, which runs alongside the clipboard and remembers ALL data. This is especially useful for writers who use word processors to review a series of edits / versions.
You can read more about this program at:
http://www.clipbox.cn.gs/
There are many apps like this and most are small downloads with good shareware demos and a modest fee if you want to buy the full app or the pro version.
You can review a number of of clipboard companions at:

What she did is type it up in internet explorer, then she wanted to transfer it to word so she could spell-check it. So she copied it, closed the IE, then accidentally used ctrl C on another bit of text. Pretty clumsy of her, I think. I suspect there is no way to retrieve it, but wanted to give it a shot anyway.

Hmm, Internet Explorer? An interesting choice of word processors.
Since she did use that program however it might be floating around in the temporary internet files folder(s).

I'll take a look at it.
